The two most common times to trim lavender is either in the fall (just before the first frost) or in the early spring (just after the last frost). Any other time should not harm the plant, however, could delay the next bloom.
In your case, it sounds as if you will be fine. And as you expect, you may experience a little later bloom than normal. Depending on the age of the plants, if you start within the first year or two, you can actually train the plant to bloom twice each year.

If you are referring to English Lavender (Lavandula angustifolia) it usually doesn't bloom until late summer. Mine dies off to the ground but comes back every spring. You may be happily surprised to see a bushier and fuller Lavender plant...that blooms at its normal time. You have not harmed it at all :o)
