It is because the irregular hormones in the plants. Some of the hormones are auxin, giberellins, cytokinins, and ethylene. There are many others but for you answer these hormones will help out. Fruit growers use to spray auxin to promote uniform flowering. Giberellians are used to initiate flowering and if there are too much then flowering can happen at the wrong times but also they can be used if the fruit trees are not maturing at the given time. Cytokinins can be used to delay aging in leaves or in other words it can delay the apical meristems in the plant. Ethylene can ripen fruit too soon and grow out of season.
